Pomegranate Bark

Gluten Free, Low FODMAP, Vegetarian suitable

This pomegranate bark is extremely more-ish, and a showstopper at any nibbles station. The sweet juicy arils burst in the mouth and compliment the bitterness of a good dark chocolate perfectly. Great for any time of the year, and makes a very special homemade gift.

Ingredients

  • 250g dark chocolate
  • 1 tsp coconut oil
  • 80g pomegranate arils/seeds
  • handful crushed walnuts

Instructions

  1. Line a brownie tin with baking paper and place the pomegranate arils evenly over the base.
  2. Melt together the dark chocolate and coconut oil in a glass bowl over a boiling pot of water.
  3. Pour over the melted chocolate mixture, smoothing out with a spatula nice and thin and even.
  4. Evenly sprinkle over the crushed walnuts.
  5. Place in the refrigerator for a minimum of 2 hours to set.
  6. Once fully set, lift out the baking paper and peel back. Cut into even pieces using a sharp, heavy knife trimming off the edges to create nice sharp edges, if you wish. Alternatively, simply crack into shards of differing sizes!
  7. Store in the refrigerator in an airtight container - consume within 6 days.
