Gluten Free, Low FODMAP, Vegetarian, Onion and Garlic Free

This flavor combo is a classic and a constant winner in my books, and they make for a really show-stopping sweet treat, host gift, or perfect for those “what-to-bring-when-you-are-told-to-bring-nothing-at-all” scenarios. Quick and delicious with minimal ingredients, I hope you and your family love this recipe as much as I do!

Ingredients

  • 200g dark chocolate
  • 1tsp coconut oil
  • 125g fresh blueberries
  • Peanut Butter, smooth no salt added
  • Dried flowers to top (optional)

Instructions

  1. Line a tray with baking paper and evenly spread out the fresh blueberries.
  2. Break up the dark chocolate and melt with the coconut oil in a bowl over a pot of boiling water.
  3. Pour the melted chocolate mix over the blueberries and combine until all blueberries are coated and in an even layer.
  4. With a teaspoon, drizzle over the peanut butter... be creative and rustic! I used about 2 tsp.
  5. Using a chopstick or similar, swirl through the peanut butter. Top with dried flowers at this stage if you wish.
  6. Cover with cling film and pop in the refrigerator to set. I usually leave overnight, especially with a thicker bark.
  7. Once set, remove from the baking paper and cut up into bite sized pieces.

Notes

Store in an airtight container in the refrigerator for 4 days.
